7 Easy Tips for Low-Carb Baking When You're on a Keto Diet

Getting on a low-carb diet can be hard if you love to bake. White flour and sugar are the main ingredients that you use to bake, these are the two items to avoid in low-carb diets. It's possible to bake without regular flour and sugar, however. You only need to get creative and learn to bake with new ingredients.


Use almond flour


When you need to use regular wheat flour in a recipe, it's sometimes possible to swap it out for almond flour. It's important to remember, however, that almond flour is not the same as almond meal. With almond flour, the skins are removed from almonds, the nuts are blanched, and ground to a fine powder. With the almond meal, you leave the skins on and grind the nuts to a coarse powder. Almond meal does not work well for baking; almond flour does, however.


Try coconut flour


Coconut flour is made from the kernels of coconuts. The meat is dried and ground up to make a fine flour. Coconut flour isn't as easy to work with as regular flour, however. It can be absorbent and sticky. Neither coconut flour nor almond flour can take the place of all-purpose flour. These flours behave differently and need recipes specially created for them.


Try flax meal


Low-carb recipes often use flax meal. Flax meal is also often used to substitute for eggs in baking recipes. It's a good idea to go with golden flax meal instead of regular flax meal. Golden flax meal tends to be less sticky. Once again, it's important to remember that you can't simply swap out regular flour for flax meal in a recipe. You have to use a recipe that's specially designed for use with flax meal.


Don't use your ingredients cold


Keto recipes often call for the use of lots of fat. Whether you need to use cream cheese, butter or eggs, it's important to take these ingredients out of the refrigerator an hour before you need to use them. When you bring these ingredients up to room temperature, you'll be able to blend them well.


Use almond milk, coconut milk or heavy cream in place of regular milk


Heavy cream has fewer carbs than milk. When a recipe requires milk, then, you can use heavy cream diluted with water, instead. Unsweetened almond milk and coconut milk are good ideas for ketogenic baking, too. They are both lower in carbs than regular milk.


You may often need to use extra baking powder or soda


When you remove regular flour from your recipes, they can turn out much denser than regular baked goods. For this reason, when you make low-carb baked goods, you will usually need more leavening, compared to regular recipes. If your recipes seem to require more baking soda or powder than you're used to using, you shouldn't worry. It's normal with low-carb baking.


Prepare your pans with extra butter


Low-carb doughs and batters tend to be sticky. To make sure that they don't stick to the bottoms and sides of your pans, you need to coat them with plenty of butter. If you're making a recipe like low-carb brownies, that use especially sticky batter, it can make sense to apply butter on the pans, and use parchment paper, as well.


When you first start out with low-carb baking, you should stick closely to the recipes that you find. Once you get a feel for how low-carb ingredients behave in recipes, you can begin experimenting by swapping regular ingredients out for low-carb ingredients in recipes.
